Oven Baked Pancakes Recipe

If you're stuck for ideas of what to cook for breakfast then this post is for you! Oven Baked Pancakes are a great alternative to the traditional fried pancakes, and they're just as yummy. If not even yummier. I've listed all the ingredients and the method below.

30g unsalted butter, melted plus 4 tsp for the dishes
3 large free range eggs
125ml whole milk
70g plain flour
1tsp good vanilla extract
1 tsp grated orange zest
pinch of salt

1 tin of peaches, drained
1 orange, peeled and cut up
pecan nuts
a splash of cream
dusting of sugar

Pre heat the oven to 220/Gas Mark 7
Place 4 individual ovenproof dishes onto a baking tray and add 1 tsp of butter into each dish
Whisk the Eggs, then add the milk and keep whisking. Slowly add the flour, vanilla, orange zest, the melted butter and the salt. Mix until smooth.
Place the dishes in the oven for 1 minute until the butter is hot and bubbly, ensuring the butter covers the bottom of each dish. Immediately divide the matter between the dishes and bake for 12-14 minutes until puffy and light brown.
Turn out the pancakes onto a serving plate. Add your favourite toppings and serve hot.
